Candied Pumpkin Shrimp

Serves 8


1½ cups diced pumpkin

1/3 cup water

1/3 cup lemn juice

¾ cup brown sugar

1 tsp ground cumin

1 tsp ground black pepper

1 bay leaf

½ cup chopped tart dried cherries

Place all ingredients, except the cherries, in a non-reactive pot.  Bring to a boil.  Turn to a simmer and cook for ½ hour.  The pumpkin should be translucent.  Add the dry cherries.  Let cool.


1 ½ # peeled and deveined shrimp

3 T extra virgin olive oil

1 T lemon juice

1 tsp chopped parsley

1 tsp chopped oregano

Saute or grill shrimp until fully cooked, but not curled.  Place shrimp in a bowl and spoon some pumpkin over the top.  Add the other ingredients and season with salt and pepper.  Let marinate 1 hour.  Divide shrimp on plates or on a platter.  Garnish with some lightly dressed baby greens.  Serve and Enjoy!!!!!
