Schools Back ~ Homemade Lunchables!

Chicken Tenders
5 piece raw chicken tenders
1 T plain yogurt
pinch salt
pinch ground black pepper
pinch dried thyme
pinch garlic powder
¼ cup bread crumbs or corn flake crumbs
¼ cup parmesan cheese
Marinate chicken in yogurt, salt, pepper, thyme and garlic. Please use a blend of any spices you like. Let sit refrigerated for 10 minutes. Mix crumbs and cheese. Dip each piece separately into the crumb mix. Turn, press and coat well. Place on a baking sheet and bake at 350* until golden and chicken is cooked through. About 15 minutes. Add a little honey to your favorite mustard to make a dipping sauce. Enjoy!!!!!
Pita Toasts For Pizza
1 whole wheat pita with or without pocket (available at farmers markets)
1 T extra virgin olive oil
1 pinch thyme
1 pinch salt
Toast the dry pita in a pannini press or George Forman. Mix other ingredients and brush on toasted pita. Cut in 6-8 pieces. Or you can brush it with oil mix cut and bake in the oven at 350* for 10-15 minutes. Until toasted. Serve with cheese dip, pizza toppings or hummus. Enjoy!!!!!
