Beer Battered Fried Chicken Skewers

Beer Battered Fried Chicken Skewers

Serves 4

Chicken

2 chicken breasts cut in 6 strips each

12 10"skewers

Weave strips on the skewers

Beer Batter

½ cup amber beer

½ cup seltzer

1 T canolia oil

½ tsp cayenne

½ tsp ground mustard seed

¼ cup corn starch

1 cup flour

2 egg whites

Place dry ingredients in a bowl.  Stir in soda, oil and beer.  Whip egg whites to soft peek and fold in.  Heat enough oil to cover chicken in a deep pot over medium heat.  Place a drop of batter in oil to see if it is hot.  The batter should sizzle not drop to the bottom.  Dip chicken in batter.  Fry to golden and cooked through.  Serve with your favorite sauces.  Enjoy!!!!!

Mango Mustard

1 ripe mango chopped

1 T honey

1 T lime juice

5 T Dijon mustard

1 T extra virgin olive oil

Combine all and stir to soften mango.
