#1 Fresh Berries & Cream
1 cup mixed berries (strawberries, raspberry, blueberry and/or blackberry)
1/2 cup sour cream
1 Tbsp light brown sugar
1/4 tsp Vanilla extract
1 tsp Grand Marnier (optional)
1 sprig Fresh Mint
MOP: Rinse berries and place in a bowl. Combine remaining ingredients and spoon on top of berries. Garnish with mint if desired.
#2 Berry Tiramisu
Assorted Berries (strawberries, raspberry, blueberry and/or blackberry)
1/4 cup granulated sugar
1/2 cup orange juice or 1/4 cup Grand Marnier
1 pt heavy cream
2 Tbsp granulated sugar
1/2 tsp vanilla extract
5 oz Mascarpone Cheese
1 tsp orange zest
1 Tbsp Grand Marnier (optional)
1 pkg Ladyfingers
1 cup simple syrup
MOP: Combine berries, 1/4 cup sugar and orange juice or grand Marnier. Cover and let sit for at least 1 hour. Combine heavy cream, 2 Tbsp sugar and vanilla in a mixing bowl and beat until light and fluffy. Do not over mix or will turn into butter. Combine Mascarpone, orange zest and grand Marnier and fold in whipped cream. Layer ladyfingers in the bottom of a dessert dish (trifle bowl, glass dish, or individual bowls) and brush with simple syrup. Spread a layer of mascarpone mixture over ladyfingers and top with berries. Spread another layer of cheese mixture and continue layering as desired.
