Warm Fava Bean Bacon Salad

Warm Fava Bean Bacon Salad
Serves 4

1 # fava beans
½ cup roasted corn
1 parsley root peeled and sliced thin
1 cup picked flat leaf parsley leaves
½ cup cooked chopped bacon pieces
1 T chopped shallots
1 tsp chopped garlic
1 T bacon fat
1 T extra virgin olive oil
2 T red wine vinegar
1 head nise’s red oak lettuce
Remove fava beans from there shell. Blanch in water for 1 minute until tender and cool in ice water. Peel off outer shell. Remove the core and rib from the red oak. Tear into large bite size pieces and wash. Warm beans, corn, bacon, shallots and garlic in bacon fat and olive oil. When warm add vinegar and remove from heat. Pour mixture over the parsley root, parsley leaves and dried lettuce. Toss and divide on plates. Serve as a salad or an accompaniment to an entrée. Enjoy!!!!!
